Yes, WE, the hubs and I, and the kids.
I only cook with ground turkey when we have sloppy joes, tacos, chili, etc.
Every once in a while,
when we let the kids get a happy meal for a special treat,
they will request a cheeseburger, but mostly, they just love nuggets.
I have been searching for a crockpot vegetarian lasagna recipe for.ev.er.
I found a few, but they all had "weird things" in them.
Well, at least to my family they were weird!
;)
So, I decided to make up a recipe myself.
Tossing in what our family loves {and I know will eat} HA!
If I do say so myself, it turned out pretty delish.
I will say, next time, I will add more basil and parsley for flavor.

So, just in case you would like to make one for your family,
here is what you will need my dears!
Ingredients:
1 large bag of frozen spinach {thawed}
1 large can of mushrooms {drained}
1 large jar of spaghetti sauce
1 box of "no boil" lasagna noodles
1 container of ricotta cheese
2 cups grated mozzarella
2 cups grated parmesan
1 egg {beaten}
fresh garlic {or garlic powder}
salt, pepper, parsley, basil
here is what you will need my dears!
Ingredients:
1 large bag of frozen spinach {thawed}
1 large can of mushrooms {drained}
1 large jar of spaghetti sauce

Spread layer of spaghetti sauce in the bottom of your crockpot.
Put a handfull spinach and mushrooms on top.
Sprinkle fresh garlic {or garlic powder} on top.
Add your spices and salt and pepper {to your liking}

Break up your lasagna noodles.
Making one layer over your sauce and vege's.
Next, combine your ricotta cheese and beaten egg.
Spread a thin layer over your noodles.
Then sprinkle your cheeses on top.
{Don't use all of it, you will need it for two to three more layers my peeps}

Repeat the steps above two or three more times.
I kept going until I ran out of ingredients!
Be sure and end with your cheese on top.
Cover and cook for 3-4 hours on high.
I watched mine pretty close, so the edges wouldn't burn.
My crockpot cooks pretty fast.
I think next time, I will try it on low for 5-6 hours.
I am very happy with the way this recipe turned out.
Our family of four has had it for two meals already.
And, there is still enough left for one more meal.
Yay!
